On the longest day of the year we want to celebrate what Mother Nature gives us to find refreshment in the middle of summer. Take some lactic acid bacteria, wheat, barley, a bit of hops, maybe some oak and brettanomyces, a brewer knowledgeable enough to put all things together and you’ll experience the divine complexity of sour beer based on the simple truth that life treats you well – when you hold a glass of sour beer in your hands.
